The eggs you are about to order are fresh and bought from small producers with eco-friendly farms nearby.

If you are a spicy lover, we grow various chilies in our garden. Spice up your eggs or ask for some chili on the side!

"Huevos pericos"
A quick and easy egg recipe and one of the most popular breakfast dishes in Colombia. Prepared with scrambled eggs, butter, sautéed diced onions and tomatoes.

With vegetables
Scrambled eggs with all the ingredients that the chef is inspired to add this morning! Chopped onion, bell pepper, tomatoes, mushrooms, cheese or fresh herbs from our garden.

Benedictine eggs
With ham and Dutch sauce.

All time favorites
And of course, we do have the best traditional egg recipes: scrambled, fried, poached or boiled.

You may add: Onions, tomatoes, mushrooms, cheese, ham, bacon, corn or vegetables.

Avocado toast
Poached eggs with avocado on a toast.

Freshly baked bread
Soft, homemade brioche, chocolate and wholesome whole wheat bread, baked fresh daily.

Cereal with yogurt or milk
Sweet cereal or granola with whole or reduced fat milk. You may change milk for yogurt or almond milk.

Pancakes
Try our Colombian style pancake with honey. Ask for butter or our seasonal homemade jam.

Waffles
Delicious waffles made with flour, eggs and cheese, served with fresh fruit or creamy ice cream.

Arepa with artisan cheese
The "arepa" is an ancestral corn-based food that has transcended time and is present in the Colombian cuisine.

The cheese is homemade, from a nearby farm.

Tofu omelette
A plant-based interpretation of the classic omelette, crafted with delicately seasoned tofu and a silky texture.
Prepared with fresh vegetables from local producers and regional herbs, it offers a perfect balance of flavor, freshness, and texture.

Vegan farm-style eggs
A delicate plant-based take on the traditional breakfast favorite. Made with textured soy, fresh tomatoes, and sautéed onions, carefully seasoned to achieve a comforting flavor and a soft, satisfying texture.

In Colombia, aromatic herbal infusions are a cherished digestive tradition. At Bambusa, we prepare ours with fresh herbs grown in our garden. Our special blend features lemon basil with spearmint and mint, but feel free to ask for your own custom mix.
